This is bread made by bakers rather than by a food technologist, and it shows: more than thirty hours of fermentation, a proper crust, and a great crumb. It is the item on this list most likely to be mistaken for ordinary bread by someone who has not been told.

We have it in Medium rather than Low.. At 5.7g a slice it is roughly 40% down on standard white rather than the fraction you get from the engineered low carb loaves elsewhere.

The bread toasted well, was crunchy with a nice chew and was not obviously very low carb bread.
