Why we recommend it

Konjac noodles are made from glucomannan, a fibre that holds water and does very little else, which is how you arrive at nine calories per 100g. Almost none of it becomes glucose.

It is not pasta and never will be. The texture is springy, and the smell out of the packet puts people off before they have cooked it. Rinsing it properly and then drying it in a hot pan for two minutes fixes most of both. As a swap for a plate of pasta it is the largest single change available anywhere in this shop.

The carb bands are ours. Zero is under a gram a serving, Low under five, Medium under ten. Where a product's own marketing and its nutrition panel disagree, the panel wins and we say so on the page.

Only carbohydrates become glucose. Protein becomes amino acids and fat becomes fatty acids, which is why a fatty snack with two grams of carbohydrate does very little to your glucose and a fat-free one with twenty does rather a lot.
